In the field of science, when you want to weigh something, you first weigh the empty vessel–such as the beaker–so that you can subtract that from the final weight to get an accurate measurement. The same goes for cooking. Before using it to taste a sauce, for example, put the spoon in your mouth for at least ten seconds. That way, you’ll know what flavors come from the spoon and what flavors come from the sauce.

Much of food is salesmanship. That’s why it’s important to have a vocabulary of good fancy cooking words to make your dishes more appealing. When you invite your friends over for dinner, impress them by saying, “atop the patty, you will find a Heinz tomato gastrique,” or “shall we sous vide to the dining room so that we may roux upon some chili dog confit?” They’ll think they’ve been transported to a five star restaurant!

A trick to cutting onions is thinking about something really sad while you do it. It doesn’t actually keep you from crying, but hey, if the tear ducts are open, why not get some mileage out of them, right?
